
Garden Vegetable Tagine
Ingredients:
10 large carrots, chopped
10 large sweet potatoes, chopped
10 zucchinis, chopped
5 large eggplant, chopped
4 cups cauliflower, chopped
5 cups yellow onion, chopped
10 cloves garlic, finely chopped or minced
1 cup harissa
5 tablespoons fresh ginger root, minced
5 tablespoons chopped parsley
5 tablespoons chopped mint
5 teaspoons salt
2.5 teaspoons ras el hanout
2.5 teaspoons turmeric
3 tablespoons black pepper
3 handfuls of dried peppers
10 tablespoons olive oil
2 oz. white wine
Fresh mint and parsley to garnish
Directions:
1. Sauté all vegetables for about 2-3 minutes, add garlic to finish
2. Add all the spices, harissa, and other ingredients and deglaze the pan with white wine
3. Cover with the lid and cook over low heat for 40 minutes, stirring occasionally. The end result will be a thick, hearty vegetable dish!
4. Garnish with fresh mint and parsley.
